Large Black Hogs are a rare heritage breed of pig that truly graze on pasture. They produce some of the best pork you will ever eat, tender and moist with a wonderful old world flavor! They are such a hoot to raise because they are friendly and have quite a personality.
We are currently raising Large Black hogs as breeders but we won't have piglets again until next year, 2011.
Ah, the best pork you will EVER eat is from Large Black hogs. We are proud members of the Large Black Hog Association . Our next two "feeders" are going to the butcher in April, 2010 and are already sold. We have a truly great sausage recipe!
Here is what we are ordering this time:
Pork Chops, 1/2" Fresh, 4 per package
Ham, smoked and cured and chopped into 1/2 hams
Ham Hocks also smoked and cured 2 per package
Bacon, smoked and cured, sliced and packaged in 1# packages
Shoulder going into sausages
Blade going into sausages
Spare ribs, cut 1/2
Pork bones (saved to be cooked later for the doggies)
Sausage (NO CURE; minimum 15# per spice mix; no more than 2 different spice mixes per pig) in 2# packages if links and 1# packages if pan sausage. Seasoning is our own special mix.
